The main reason for making note of the total number of competitors is to see if you can come up with a true niche topic

For example, if you find a keyword that has 2,000 searches per month and fewer than ten competitors, the supply/demand ratio equals .005, or 1/500th of a percent. There is a pretty good chance that your site will be easily found when you're playing with those odds, regardless of whether you pay to advertise.
